Copenhagen: Bæst

“Made by hand and eaten by hand!” is Christian Puglisi’s Bæst’s motto at THE address for Neapolitan oven wood-fired pizza, house charcuterie & cheese, where everything is local, from their own farm, salumeria and micro-dairy. Wines are all-natural of course.

Pronounced in two syllables (Bay-est), their pizza is made with local flour and topped with local ingredients like this shaved leek, smoked house made organic milk Mozzarella cheese, spicy house made stracciatella & pork sausage.

They will tell you there isn’t cutlery and you’ll need to use your hands to roll it up to eat like a taco to keep all the good fillings “in.”

To say it is wildly popular is an understatement.

 

Insider Tip:

Tables are communal, food is served family style – to be shared by the whole table. Ask for outside tables in pretty weather if you don't mind direct sun.
